A tropical dessert with a boozy feel.  Flavors of a pina colada cocktail bathes in three different types of milk for a creamy finish.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

For cake

  1. Preheat oven to 350°F. Grease 9x 12’’ baking dish. Set aside.
  2. In a large mixing bowl, combine the flour, baking powder, salt and powdered milk. Set aside.
  3. Using a hand mixer, beat the yolks and sugar on medium speed until thick and pale in color. Add vanilla essence, coconut extract and milk.
  4. In another mixing bowl, add the egg whites and cream of tartar, beat on medium speed. This helps to stabilize egg whites.
  5. Gently add the flour to the egg yolk mixture.
  6. Fold the egg whites into the flour mixture in three parts. Add the pineapple to the mixture and avoid over mixing.
  7. Pour the batter into prepared baking dish and swirl in coconut flakes. Bake until the cake is golden brown and the leave the corners of the pan (about 40 minutes). Let cool completely.

For the leches/ 3 milks mixture

  1. Combine all ingredients in a mixing bowl and whisk until well combined.

For the whipped cream

  1. Combine all the ingredients in a large mixing bowl and use a hand or stand mixer, whisk on high speed until stiff peaks form.
  2. CAKE ASSEMBLY:
  3. 1. Poke holes in the cake using a fork, pour milk mixture over the cake.
  4. 2. Spread whipped topping over the cake until all areas are covered.

Notes

If you do not have any cream of tartar, use lemon/lime juice. Optional – decorate with sliced pineapple, maraschino cherries and toasted coconut flakes.
