starting with a bold spin on my meatballs — made with masa’s corn tortilla chips as the “flour” & packed with flavor.
then comes a big dollop of street taco hummus, a quick mexican-style cucumber salad, & all your favorite taco toppings.
gluten-free, protein-packed, & bringing all the street taco flavor home — no truck required 😉

- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Chorizo Seasoning - Siete Foods, see notes for my homemade version
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 2 lb2 lb2 lb Ground Chicken, turkey or beef

- 0.5 cup0.5 cup0.5 cup Cottage Cheese
- 6 - 86 - 86 - 8 easy baked bacon (click for recipe), finely chopped
- 2 oz2 oz2 oz Cotija Cheese, or queso fresco
mexican cucumber salad
- 1 cup1 cup1 cup English Cucumber, diced
- 1 cup1 cup1 cup Tomato, Cherry, diced

- 1 cup1 cup1 cup Radish, diced
- 0.25 cup0.25 cup0.25 cup Cilantro, finely chopped
- 0.25 cup0.25 cup0.25 cup Cotija Cheese, or queso fresco
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Taco Seasoning - Primal Palate

- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Classic Monkfruit Sweetener (with Allulose) - Lakanto

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
street taco meatballs
- preheat oven to 400.
- add the masa corn tortilla chips, monk fruit, & chorizo seasoning to a food processor & blitz a few times into a finer crumble.
- to a bowl, add crunchy mixture + remaining meatball ingredients.
- using a small cookie scoop, make mini meatballs (~80-100).
- place meatballs on a lined baking dish, then bake for ~15 minutes.
mexican cucumber salad
- in a bowl, combine all ingredients; refrigerate until ready to serve.
building your bowl
- to a plate or bowl, layer: street taco hummus → several street corn meatballs → mexican cucumber salad → masa corn tortilla chips → cilantro, cotija cheese (or queso fresco), & hot sauce.
Notes
chorizo seasoning: 1 T vinegar, 2 t smoked paprika, 2 t chili powder, 1 t cumin, 1 t oregano, 1 t coriander, ½ t garlic powder, ½ t onion powder, ¼ t cinnamon, salt & pepper to taste
