- Make the Blueberry Compote: In a small saucepan, combine the blueberries, 1 tablespoon monkfruit sweetener, and 1 teaspoon lemon juice.
- Cook over medium-low heat, stirring occasionally, until the berries burst and the mixture thickens slightly (about 5–7 minutes).
- Remove from heat and let cool completely.
- Blend the Compound Butter: In a food processor, add the softened butter, cooled compote, and 1 tablespoon powdered monkfruit sweetener.
- Pulse until smooth and fully combined. Scrape down the sides as needed.
- Shape and Chill: Spoon the mixture onto a sheet of plastic wrap. Roll into a log or tube shape, twisting the ends to seal.
- Refrigerate for at least 6 hours, or until firm.
