Sausage, Broccoli & Mozzarella Pasta
Why is it that the most simple meals that you throw together always come out the best?! I was craving some sort of sausage pasta, and grabbed some baby broccoli but knew it would need more - so into the cart went mozzarella balls. If you haven't tried my moms Famous Summer Pasta yet, you must, but I got the idea for mozzarella from that recipe. The hot pasta and sausage/broccoli mixture warms the mozzarella balls and makes them very slightly melty. It's the best! I highly recommend this if you want to make something easy, that you can use for leftovers, and hit your protein and veggie goal in one meal.
Ingredients
- 1 lb1 lb1 lb Rotini, Barilla Protein+

- 1 lb1 lb1 lb Italian Sausage, Mild, I use Premio Sausage Meat

- 3 bunch3 bunch3 bunch Baby Broccolini, cleaned and trimmed
- 8 oz8 oz8 oz Mozzarella Balls (Bocconcini)
- 1 whole1 whole1 whole Lemon, juiced

- 1 clove1 clove1 clove Garlic, chopped or grated

- 0.5 whole0.5 whole0.5 whole Yellow Onion, diced small
- 0.5 cup0.5 cup0.5 cup Beef Broth

- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 1 tsp1 tsp1 tsp Salt and Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook pasta according to package instructions.
- While the pasta is cooking, heat a large pan over medium heat.
- Add olive oil and once warm, add onion and garlic.
- Saute until transluscent and fragrant.
- Add baby broccoli and saute until it starts to soften.
- Move broccoli to one side of your pan, and add the ground sausage.
- Saute until no longer pink.
- Add juice of one lemon, broth, salt and pepper.
- Combine everything and let simmer in the broth for 5 minutes, stirring ocassionally.
- Add mozzarella balls, pasta and sausage mixture to a large bowl.
- Toss. Adjust any salt and pepper to your taste. You can also toss with parmesan cheese.
- Enjoy!
