The hype is so real - this one-pot, under 30-minute pasta is truly so delicious! It's so simple and can be made in one pan, but the simple flavors of tomatoes, lemon, parmesan and Italian herbs all come together to make a light and refreshing pasta dish. I used a high protein pasta to add a little protein if that's your thing! This would be a crowd pleaser for sure.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large pot or deep pan, heat olive oil over medium heat.
  2. Add garlic and and halved grape tomatoes. Stir occasionally until softened.
  3. Pour in the boiling water and add the pasta, Italian herbs, salt, and pepper. Stir to combine.
  4. Cook the pasta until the water is mostly absorbed, stirring occasionally.
  5. Add in the lemon zest.
  6. Stir in the chopped spinach and stir until wilted.
  7. Add 1/2 cup parmesan cheese and combine.
  8. Serve hot and store in an airtight container in the fridge.
  9. Enjoy!
