Meghan Markle’s Viral Pasta
The hype is so real - this one-pot, under 30-minute pasta is truly so delicious! It's so simple and can be made in one pan, but the simple flavors of tomatoes, lemon, parmesan and Italian herbs all come together to make a light and refreshing pasta dish. I used a high protein pasta to add a little protein if that's your thing! This would be a crowd pleaser for sure.
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 4 cloves4 cloves4 cloves Garlic, minced
- 2 cup2 cup2 cup Tomato, Grape, halved
- 1 whole1 whole1 whole Lemon, zested
- 4 cups4 cups4 cups Hot Water, boiling
- 12 oz12 oz12 oz Spaghetti, Barilla Protein+
- 2 tsp2 tsp2 tsp Italian Seasoning, or herbs
- 1 tsp1 tsp1 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
- 2 cup2 cup2 cup Baby Spinach, chopped
- 0.5 cup0.5 cup0.5 cup Parmesan Cheese
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large pot or deep pan, heat olive oil over medium heat.
- Add garlic and and halved grape tomatoes. Stir occasionally until softened.
- Pour in the boiling water and add the pasta, Italian herbs, salt, and pepper. Stir to combine.
- Cook the pasta until the water is mostly absorbed, stirring occasionally.
- Add in the lemon zest.
- Stir in the chopped spinach and stir until wilted.
- Add 1/2 cup parmesan cheese and combine.
- Serve hot and store in an airtight container in the fridge.
