These baked dill pickle chicken bites are tangy, crispy, and downright addictive. Marinated in pickle juice and coated in homemade dill seasoning, each bite packs a punch of pickle flavor. Perfect for protein-packed snacking, a salad add-in, or a fun, flavorful dinner twist!
Ingredients
- 1 cup1 cup1 cup Dill Pickle Juice

- 2 lb2 lb2 lb Chicken Breasts, Boneless Skinless

- 2 tsp2 tsp2 tsp Extra Virgin Olive Oil

- 2 Tbsp2 Tbsp2 Tbsp Dill Weed

- 1 Tbsp1 Tbsp1 Tbsp Cornstarch
- 1 tsp1 tsp1 tsp Nutritional Yeast

- 1 tsp1 tsp1 tsp Chives, Dried
- 1 tsp1 tsp1 tsp Garlic Powder

- 1 tsp1 tsp1 tsp Granulated White Sugar, *can sub any kind of sugar

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 0.5 tsp0.5 tsp0.5 tsp Salt

- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place the cubed chicken into the pickle juice, cover, and allow to marinate for at least 30 minutes, or preferably, overnight in the fridge.
- Preheat the oven to 400ºF and generously prepare a large baking sheet with parchment paper.
- Remove the chicken from the marinade and combine with the olive oil until evenly coated.
- Add in the dried dill, cornstarch, nutritional yeast, dried chives, garlic powder, sugar, onion powder, salt, and black pepper, and gently toss together until fully coated.
- Place the chicken bites onto the prepared baking sheet in a single layer and bake for 12 minutes, flipping halfway through.
- If you desire a crispier chicken bite, broil them on high for 1 minute.
- Remove from the oven, top with crumbled Parmesan or feta cheese, if desired, and enjoy!
- Store leftover dill pickle chicken bites in an airtight container in the fridge for up to 5 days
- Airfryer Directions: Cook at 400ºF for 6 minutes, flip, and another 4-6 minutes or until the internal temperature reaches 160ºF.
