Ramen (chicken and vegetable)
Our whole family loves ramen. This recipe is gluten free, dairy free, soy free, and egg free. But, full of those delicious ramen flavors you love. Today I used Lotus Foods Jade Pearl rice ramen, but any ramen you like will work.
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil

- 222 Chicken Breast, small dice

- 222 Celery, sliced thin
- 222 Carrots, small dice
- .5.5.5 Red Onion, small dice
- .5.5.5 Bell Pepper, any color, small dice
- 1 cup1 cup1 cup Snap Peas, cut into 1/3s
- 222 Baby Bok Choy, sliced thin
- 1 tsp1 tsp1 tsp Ginger Root, grated

- 1 clove1 clove1 clove Garlic, minced

- 2 cups2 cups2 cups Chicken Bone Broth

- 3 cups3 cups3 cups Chicken Broth, Low Sodium, Or vegetables broth

- 1 tsp1 tsp1 tsp Fish Sauce
- .25 cup.25 cup.25 cup Coconut Aminos
- .25 cup.25 cup.25 cup Asian Sesame Dressing & Marinade - Yo Mama's Foods, or other Asian marinade you like

- 1 tsp1 tsp1 tsp Salt

- .25 tsp.25 tsp.25 tsp Black Pepper

- 333 Rice Ramen Noodles, I like the Lotus Foods brand

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large soup pot cook the chicken in oil on medium for about 7 minutes. Stir periodically.
- Add the celery, carrots, onion, and bell peppers. Stir and let cook for 3-5 minutes.
- Add the snap peas, bok choy, ginger, garlic, broths, fish sauce, coconut aminos, marinade, salt, and pepper. Stir and let cook for 5 minutes.
- Add the ramen noodles and cook for 5 minutes depending on brand. Test noodles to ensure they are soft and cooked through.
- Serve and enjoy.
Notes
You can top this ramen with chopped cilantro or a squeeze of fresh lime if you want to punch up the flavor even more. This recipe can be doubled or frozen. I would not cook the ramen noodles until you plan to consume it, this ensures freshness.
