Peanut Butter Cup Chia Pudding
Vegan friendly, nutritious, gluten free & refined sugar free creamy chia pudding with homemade dark chocolate peanut butter cups!
Ingredients
- 2 cups2 cups2 cups Coconut Milk, Any milk of choice
- 0.25 cup0.25 cup0.25 cup Creamy Peanut Butter, Or try almond butter for an almond butter cup version

- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 0.333 cup0.333 cup0.333 cup Vanilla Protein Powder, Optional

- .5 tsp.5 tsp.5 tsp Pure Vanilla Extract

- 0.5 cup0.5 cup0.5 cup Chia Seeds
- 0.25 cup0.25 cup0.25 cup Creamy Peanut Butter

- 2.5 Tbsp2.5 Tbsp2.5 Tbsp Vanilla Protein Powder, Or oat / almond flour

- 1 Tbsp1 Tbsp1 Tbsp Pure Maple Syrup
- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Coconut Oil, Melted; depending on how drippy your PB is
- .5 cup.5 cup.5 cup Dark Chocolate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend milk, pb, syrup, protein, and vanilla together. Add chia seeds and pulse again, scraping the sides 3-4x in between
- Transfer blender to the fridge overnight, or pour into a jar for optimal space
- In the morning, blend again until smooth (depending on your blender you won't be able to break down all the seeds, but blaming still makes it much smoother, versus traditional chia )
- **if you don't mind the texture of traditional chai pudding feel free to omit the blending step and just combine chia seeds with milk mixture and refrigerate overnight
- Make homemade PB cups by melting chocolate with a pinch of coconut oil in 30 second intervals
- Pour into mini muffin liners, and move around to coat the sides
- Freezer until hard, about 10 min
- Mix PB, protein, syrup, and coconut oil together, pour into hardened chocolate shell, top with more melted chocolate and freeze another 15 min
- Pop out of muffin liners
- Pour set chia pudding into 4 jars and top with melted chocolate & peanut butter cups
- Set in the fridge until chocolate has set
- Enjoy!
