loaded smashed potatoes
if you like loaded baked potatoes AND crispy potato skins, you’re going to LOVE these loaded smashed potatoes 🥔🧀🥓✨ melty cheese + crumbled bacon on top of crispy smashed baby potatoes. top it with a drizzle of my homemade burger sauce or primal kitchen's special sauce for next level deliciousness!
Ingredients
- 1.5 - 2 lb1.5 - 2 lb1.5 - 2 lb Potatoes, Baby
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Bacon Grease, or fat of choice
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Meat & Potatoes Seasoning - Primal Palate, or seasonings of choice

- Colby Jack Cheese, or cheese of choice, sliced
- easy baked bacon (click for recipe), crumbled
- Chives, or green onions, chopped
- Special Sauce - Primal Kitchen, or use my homemade burger sauce in the notes!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 400.
- fill a pot with cold water & baby potatoes.
- liberally salt potatoes, then bring to a boil & cook until fork tender (~15-20 minutes).
- drain potatoes & let sit for 5-10 minutes to cool, then pat dry.
- mix potatoes with fat of choice & seasonings, then place on a lined baking sheet.
- using a flat surface, smash down each potato, then place in the oven & bake for 30-35 minutes or until crispy.
- remove potatoes from the oven & switch to broil.
- add cheese, then place back in the oven for 2-3 minutes to melt cheese.
- remove from oven & top with bacon, chives, & a drizzle of sauce of choice.
Notes
- 1/2 cup greek yogurt
- 1/4 cup unsweetened ketchup
- 2 T dijon mustard
- 2 T golden monk fruit
- 2 T dill pickles
- 1/2 t garlic powder
- 1/2 t onion powder
- 1/2 t smoked paprika
- 1/2 t salt & pepper
