Salmon Burgers!
These salmon burgers are such big hit in our house! I was never a huge fan of sockeye salmon, always felt to dry, but this is such a brilliant use of sockets salmon. I love how they get a golden crust and have a bit of crunch when you bite into them. It is the kind of bite where you feel like you could eat 7 of them in about 5 minutes. Not that I would do anything like that. I'm a very sensible eater. Very. Very... Sensible.
Ingredients
- 1 lb1 lb1 lb Salmon, Sockeye, ground

- .5 tsp.5 tsp.5 tsp Sea Salt

- 1 tsp1 tsp1 tsp Cajun Seasoning

- .5 tsp.5 tsp.5 tsp Dill, Dried

- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard
- .25 cup.25 cup.25 cup Red Onion, minced
- 2 clove2 clove2 clove Garlic, minced

- 1 whole1 whole1 whole Lemon, juiced

- 1 tsp1 tsp1 tsp Lemon Zest
- 1 Tbsp1 Tbsp1 Tbsp Original Extra Virgin Olive Oil - Kosterina

- 2 Tbsp2 Tbsp2 Tbsp Panko Bread Crumbs
- 1 Tbsp1 Tbsp1 Tbsp Mayonnaise
- .5 cup.5 cup.5 cup Mayonnaise
- 2 tsp2 tsp2 tsp Ketchup
- 1 tsp1 tsp1 tsp Yellow Mustard

- 2 tsp2 tsp2 tsp Dill Pickle Juice

- 1 pinch1 pinch1 pinch Sea Salt

- 1 pinch1 pinch1 pinch Black Pepper

- 1 tsp1 tsp1 tsp Lemon Juice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all of your salmon patty ingredients into a medium sized mixing bowl and mix together by hand
- Roll 4 medium large balls and place on a parchment lined baking sheet, cover, and refrigerate until cook time
- In a small serving bowl mix your sauce ingredients together and refrigerate
- pour out 1 cup of bread crumbs, form your patties and then coat each side in the bread crumbs
- Grill in a cast iron pan until each side is golden brown our reaches an internal temp of 145 degrees
- Serve on a brioche bun with sauce and whatever else you want to throw on there. ( I really like greens, red onions and tomatoes ) Enjoy!
