Low Carb Swiss Chicken Casserole, one of my favorite high-protein chicken recipes. It’s perfect for diabetic friendly meal prep or quick weeknight dinners. Easy to make and great for anyone following a low carb lifestyle. A simple, family-friendly recipe that’s both satisfying and healthy.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a medium-sized saucepan over medium heat, add the cream cheese, chicken broth, onion powder, garlic powder, salt, pepper, and optional celery seed. Whisk everything together until smooth and creamy to make the cream of chicken sauce.
  2. Preheat the oven to 375 F.
  3. Grease a 9 x 13-inch casserole dish with butter. Spread the chopped cooked chicken (I used rotisserie chicken) evenly across the bottom of the dish.
  4. Pour the homemade cream of chicken sauce over the chicken in the casserole dish.
  5. Place a layer of Swiss cheese slices on top of the chicken and sauce. (see video above)
  6. In a medium bowl, mix the grated parmesan with the pork rind crumbs and melted butter. Sprinkle the mixture over the Swiss cheese slices, then bake for 30 minutes, or until the top is golden brown and crispy.

Notes

If fat content is a concern, use reduced-fat cream cheese and opt for low-fat Swiss cheese to maintain flavor while cutting back on fat. If pork is a concern, use a blend of ground nuts and seeds as a topping to keep the casserole both low carb and suitable for your dietary needs.
