- Preheat oven to 375°F.
- In a large bowl, add eggs, yolks and milks. Whisk until smooth and there are no streaks visible.
- In another large bowl, place strainer and pass egg mixture through to remove any possible shells.
- Add vanilla bean paste and spices then whisk until smooth.
- In a heavy-duty saucepan, add sugar and water and allow to melt over low heat.Use a wooden spoon to whisk if clumps form. When the sugar melts and turn into a very light brown, immediately remove over the heat and carefully pour into (4) 4" ramekins evenly. When pouring melted sugar into the ramekins, be careful and ensure the sides are covered high enough on the sides.
- Pour the custard into the ramekins evenly and place all in a large baking dish. Add hot water to fill up the baking dish about halfway from the ramekins. Cover with tightly with foil and place it in oven.
- Bake covered for 15 minutes then continue baking uncovered for 15 minutes undisturbed. When the custard is set and has a slight jiggle, remove from the oven.
- Allow to cool at room temperature for an hour then refrigerate until ready to serve.
- For service, use a butter knife and gently go around the edges of the ramekin to release the flan from the edges. Overturn ramekin onto a plate and spoon apple compote over the top. Enjoy.
- In a saucepan, add all ingredients and cook until syrupy and the apples have softened.

Notes
Instead of using ramekins, you can use a larger baking dish and bake for 10 mins. Test for doneness, it shoud be firm but jiggly.
