Apple Atole (Atole de Manzana)
Atole is a traditional Mexican drink dating back to pre-Hispanic times, made by thickening water or milk with corn masa and sweetened with piloncillo (or sugar). I put a fun fall twist on the classic recipe by adding apples and using corn milk! It's so warm and comforting with every sip, and takes me back to my childhood! Provecho amigos!
Ingredients
- 2 cups2 cups2 cups Cornmilk - Maizly

- 2 cups2 cups2 cups Water
- 1 whole1 whole1 whole Apple, Pink Lady, peeled, cored, and diced.
- 1 whole1 whole1 whole Cinnamon Stick, Mexican
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Piloncillo (Panela), substitute for panocha, brown sugar, or maple syrup- adjust for taste
- 2 Tbsp2 Tbsp2 Tbsp Cornstarch, mixed with 1/4 c water, see note below
- 1 Tbsp1 Tbsp1 Tbsp Vanilla Paste

- 1 pinch1 pinch1 pinch Salt

- 0.75 tsp0.75 tsp0.75 tsp Apple Pie Spice - Primal Palate

- 1 pinch1 pinch1 pinch Cinnamon Sugar Cookie Blend - Primal Palate, for garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small pot, combine diced apples, water, cinnamon stick, and piloncillo. Simmer over medium heat until apples soften and are fork-tender.
- Remove the cinnamon stick to the side. Blend the softened apples and their cooking liquid with an immersion blender or regular blender until smooth.
- Return mixture & cinnamon stick to the pot. Stir in Maizly corn milk, apple pie spice, and a pinch of salt. Bring to a gentle simmer.
- Whisk in the cornstarch slurry to thicken. Stir constantly until it coats the back of a spoon.
- Remove cinnamon stick. Add vanilla and stir well.
- Serve warm in mugs with a sprinkle of cinnamon sugar cookie blend and enjoy!
Notes
Traditional atole uses masa harina, use whichever is readily available to you!
