20-Minute Chilaquiles (Edit recipe)

This is a simplified twist on a Mexican breakfast staple. Chilaquiles are a traditional Mexican dish—typically enjoyed at breakfast—that consists of fried or baked tortilla chips, sauce, and a variety of toppings.  I've made this grain/gluten free with Siete Foods products, and comes together in less than 20 min. Provecho amigos!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. 1. Add small tsp of oil into pan on low.
  2. 2. Add enchilada sauce and let simmer.
  3. 3. Add bag of siete chips and thoroughly coat chips**. Once throughly coated remove from heat.
  4. 4. In a different nonstick pan, add butter or oil and gently crack eggs into pan.
  5. 5. For over-easy eggs, cook until the whites of the egg have set, & carefully flip it.
  6. 6. Cook additional 30-40 seconds and remove from heat. Add salt and pepper to taste.
  7. 7. To plate, serve chilaquiles as your base. Add onion, cilantro, and crumbled cheese. Top with runny egg and crema. Provecho!

Notes

** I use about 75% of the SECOND jar of enchilada sauce to ensure chips don’t get overly coated & soggy. You can add additional sauce to your preference.
