This soup is traditionally served on New Year's Day, but it is a staple in our home anytime of the year!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cook dried beans according to the package
  2. Cut up bacon and cook in a large dutch oven
  3. Remove bacon and set aside. Drain excess bacon fat (I keep mine in a mason jar for cooking)
  4. Cook sausage until brown
  5. Add carrot, onion, garlic, and celery
  6. Cook until veggies are soft
  7. Add salt and pepper, broth, beans, crushed tomatoes, and bacon
  8. Simmer, covered, for 2 hours
  9. Add greens in and cover for another minute
  10. Enjoy!
