growing up, pumpkin chocolate chip muffins were the epitome of fall time 🍂🧁 but i’d never made a gluten-free, high-protein, and sugar-free version… until now 👀
made with a few food social baking favs: primal palate gf flour + pumpkin pie spice, lark ellen farm's sprouted walnuts, & mixed up foods craft nut butter for the ultimate wholesome fall treat. 🍁
they’re gluten-free, protein-packed, & perfectly poppable — because mini just means you get to eat more 😉
p.s. warm one up & spread a little extra “maple bliss” nut butter on top for ultimate decadence 🤤

- 0.75 cup0.75 cup0.75 cup Plain Greek Yogurt
- 222 Eggs
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Water

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 350.
- to a large bowl, add all dry ingredients; set aside.
- to a mixing bowl, whisk together all wet ingredients, then fold into dry ingredients bowl.
- fold in dark chocolate chips; set aside until streusel is ready.
- in a food processor, combine all streusel ingredients, except nut butter & water; lightly blitz into a crumble.
- transfer to a bowl, then mix in nut butter & water to form a streusel-like crumble.
- using 2 mini 24 insert silicon muffin tins, add a scoop of muffin batter to ~¾ of the way full.
- top each muffin with streusel, then bake for ~18-20 minutes or until a toothpick comes out clean.
- allow to cool completely, then pop out of muffin tins.
- I like to reheat them for 10-15 seconds, then spread a little "maple bliss" nut butter on top!
