truly, this panini is a probiotic masterpiece: kefir (or greek yogurt), miso, sauerkraut, fermented pickles, & aged cheese all layered into one melty, crispy bite. 🥪✨
it’s functional, flavorful, & downright phenomenal.
Ingredients
probiotic powerhouse sauce
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Kefir, or greek yogurt
- 1 Tbsp1 Tbsp1 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp White Miso Paste
- 1 tsp1 tsp1 tsp Dijon Mustard
- 1 tsp1 tsp1 tsp Dill Pickle Juice
- 1 tsp1 tsp1 tsp Sauerkraut, the brine, make sure to get the fermented kraut!
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste

- 3 - 4 oz3 - 4 oz3 - 4 oz Tuna, Canned, drained, may sub any canned seafood
- Dill Pickle Slices, the fermented kind
- Sauerkraut, the fermented kind
- Gouda Cheese, or any sliced aged cheese

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a bowl, combine all ingredients for the probiotic powerhouse sauce.
- in a separate bowl, mix together, tuna, sauce, sauerkraut, & pickles.
- if using bread from the freezer (that’s where I store mine), first microwave for 45 seconds to thaw.
- to one half of bread, add ½ tuna mixture, slice of aged cheese of choice, other ½ tuna mixture, & top with other slice of bread.
- to a hot panini (I put mine at 400), add sandwich & press panini down until golden, gooey, & crispy brown.
- slice in half & serve with extra sauce & veggies!
