Hidden Veggie Mac and Cheese
This Mac and cheese is not actually traditional Mac and cheese. It’s the opposite but your kids will never know. This Mac and cheese is packed with veggies and protein, giving your kids the essential meal they need. It’s delicious and they will have no idea! I needed something for dinner and this sounded fun! You could use Parmesan cheese, but all I had was the kids mozzarella string cheese and it worked perfect!
Ingredients
- 1 lb1 lb1 lb Chickpea Pasta
- 2 cups2 cups2 cups Carrots, Shredded
- 1 whole1 whole1 whole Onion
- 1 Tbsp1 Tbsp1 Tbsp Olive Oil

- 1 cup1 cup1 cup Plain Greek Yogurt
- 2 whole2 whole2 whole Mozzarella String Cheese
- 0.75 cup0.75 cup0.75 cup Bone Broth

- 1 Tbsp1 Tbsp1 Tbsp Himalayan Pink Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- First, boil water and cook your pasta once water is ready.
- Preheat your oven to 400 degrees.
- Dice your onion into small pieces. Place on a baking sheet with parchment paper. Add carrots. Drizzle in olive oil. Place pan in the oven and roast until the veggies are soft.
- Add veggies to a blender along with the Greek yogurt, cheese, bone broth and salt. You may add more salt to taste. Blend together until you have a creamy sauce. Add more bone broth if the sauce is too thick and you need more.
- Pour sauce over cooked pasta and stir.
- Serve and enjoy!
Notes
I used chickpea pasta to add more protein for the kids!
