Soft and citrusy gluten-free lemon cookies rolled in powdered sugar and filled with bright lemon curd.

- 0.5 tsp0.5 tsp0.5 tsp Baking Powder

- 0.25 tsp0.25 tsp0.25 tsp Salt

- 0.75 cup0.75 cup0.75 cup Powdered Sugar
- 1 cup1 cup1 cup Lemon Curd

- Instructions:
- Combine lemon zest and sugar in a large bowl.
- Add melted butter, lemon juice, eggs, and vanilla. Whisk together.
