Inspired by the nostalgic Swiss roll we all grew up loving  but this version skips the baking, the added sugar, and the dairy. Instead, it’s protein-packed, gluten-free, and ready in minutes. The perfect sweet treat to keep stocked for when those chocolate cravings hit! Quick to make, easy to store, and satisfying enough to be a snack or dessert staple in your house year-round. ✨

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add walnuts and dates to a food processor. Pulse until crumbly.
  2. Add in almond flour, cocoa powder, salt, vanilla, collagen (optional) and pulse until well combined
  3. Add coconut milk 2 tbsp at a time. Blend again until a thick, fudgy dough forms.
  4. If too dry → add 1–2 tsp more milk.
  5. If too sticky → add a spoonful of almond flour.
  6. Press dough firmly into a parchment-lined pan. Using a rolling pin to create .25 inch dough
  7. Spread frosting over the top and gently roll dough to form the shape
  8. Chill for 30–45 minutes, then slice into cookies and enjoy
