This is the perfect creamy rich dish for a quick one pot meal. I love a one pot dish, especially when it is flexible. You have to try this, trust me.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a large skillet cook the chicken in oil on medium heat until done, about 7 minutes.
  2. Add salt, pepper, onion, bell pepper, garlic, and zucchini. Stir and cook for 3 minutes.
  3. Add chard, butter, sundried tomatoes and stir. Cook 1 minute.
  4. Add gnocchi, broth, and half and half. Stir then cover and turn to medium low. Cook for 3 minutes. Stir at least once.
  5. Remove lid and stir. Check doneness of gnocchi.
  6. When done add cheese and stir. Allow to melt into the sauce and thicken.

Notes

You can use other vegetables if you like. Cauliflower or broccoli would be amazing as well. You can top with a little grated Parmesan for even more decadent flavor.
