 but I’m coming for you đŸ”đŸ„ž protein pancakes + eggs + three meats (sausage, bacon, & canadian bacon) + melty cheese = better than any McGriddle you’re grabbing from the drive-thru (in my humble opinion 😉). protein-packed, meal-prep + freezer-friendly, & made with real food ingredients to fuel your body all day long. perfect for busy mornings, post-workout fuel, or when you want that fast-food nostalgia without the crash — just warm, savory, slightly sweet breakfast bites that actually keep you full

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 350.
  2. make my protein pancake batter, then set aside while preparing remaining ingredients.
  3. make a batch of my “cheesy eggs”, just omitting the cheese at the end (we will add cheese to the muffins).
  4. dice up chicken sausage (or sausage of choice), canadian bacon, bacon, & shred cheese of choice.
  5. to a silicon muffin tin, first add a scoop of the protein pancake batter, then add ~1-2 T of eggs, sausage, bacon, & cheese (feel free to use any kinds you like!).
  6. using a toothpick, swirl around mixture & press down (they will be quite full).
  7. finish filling all muffin tins, then bake 350 for 28-32 minutes or until a toothpick comes out clean.
  8. serve as is or sweeten it up with your favorite maple syrup!
