- 2 Tbsp2 Tbsp2 Tbsp Cottage Cheese
- 0.25 tsp0.25 tsp0.25 tsp Salt and Pepper
- 0.5 - 1 oz0.5 - 1 oz0.5 - 1 oz Mozzarella Cheese, or cheese of choice
Process

- in a bowl, whisk together eggs, cottage cheese, salt, & pepper.
- place a small skillet on low heat, then add eggs & scramble until almost done.
