I love chili because it very versatile and can be adjusted many different ways. In this version I ramped up the veggies by adding butternut squash. Chili is the perfect dish for a cool day and can be topped with lots of different goodies. Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a Dutch oven add bacon and cook on medium until done. Stir frequently.
  2. Remove onto small plate and set aside.
  3. Add oil and ground beef and cook on medium until browned, break apart as it cooks. About 7 minutes.
  4. Add onion, bell peppers, celery, butternut, jalapeno, garlic, and all spices. Stir and cook for a minute.
  5. Add tomato sauce, cherry tomatoes, soy sauce, water, bone broth, and pinto beans. Stir, then cover, and turn heat to low.
  6. Cook for an hour, stir every 10 minutes or so.
  7. Dish up and top as you like.

Notes

You can top with other things too, diced onions, tomatoes, salsa…the ideas are endless.
