My mother in law, Patsy – such a gift to the foodie space and taken far too soon! I’m sharing her secret to perfectly tasty chicken salad, which is adding a splash of apple cider vinegar to the dressing! A perfect way to add a kiss of sweetness! That tip along with a few add-ins I think make the whole combo a comfort food party in your mouth! I'm using my Juicy Oven Baked Chicken as well as the Spice House Lake Shore Shallot & Herb Blend in this recipe, so good!

  • 3 - 4 cups Juicy Oven Baked Chicken Breast (click for recipe), shredded or cubed, can sub baked chicken of choice
  • 2 cups Grapes, Red, halved or quartered depending on their size
  • 1 cup Basmati Rice, COOKED and cooled, or rice of choice
  • .5 cup Green Onion (Scallion), finely chopped
  • .25 - .5 cup Almonds, roughy chopped

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Make the dressing by combining all ingredients in a small bowl, whisking to combine well. Taste and season as desired, see not for seasoning blend sub, set aside.
  2. In a large bowl, toss together chicken, grapes, rice, green onions and almonds. Stir to fully combine, adding more grapes or nuts if desired.
  3. Re-whisk the dressing and pour about ¾ of it over the chicken mixture and gently stir. If you like your chicken salad not overly moist, you could be all done. If you like it a bit “wetter” continue to add more dressing about a tablespoon at a time until you get the desired consistency.
  4. Serve on a croissant, lettuce cups or your favorite crackers and top with more chives if desired.

Notes

While rice is not traditional, it's so delicious in this and adds some great texture, feel free to omit if you'd like or try brown rice, quinoa or your favorite grain. If you don't have the Lakeshore Shallot and Herb Blend (buy some here!) feel free to sub that with: ¼ tsp garlic powder, ¼ tsp onion powder and about ½ tsp of your favorite chicken seasoning like Montreal Chicken Seasoning.
