- 333 Egg Yolk
- 1 Tbsp1 Tbsp1 Tbsp Classic Monkfruit Sweetener (with Erythritol) - Lakanto

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat the cornmilk gently in a saucepan until just below boiling, stirring often. Simmer gently for about 10 minutes until slightly thickened, then remove from heat.
- In a bowl, whisk egg yolks and sweetener. Slowly pour the hot milk into the egg mixture in a thin stream, whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring continuously, until the custard thickens enough to coat the back of a spoon (about 20-30 minutes).
- Remove from heat, stir for another minute, then add vanilla extract. Store refrigerated up to 3 days. Reheat gently using a bain marie to prevent curdling.
Notes
Low heat is important, to keep the eggs from curdling.
