Collagen Chocolate Mini Easter Eggs
These adorable mini Easter eggs are a delicious and nourishing treat made with just three simple ingredients: sugar-free chocolate chips, collagen, and coconut oil. Melted together and poured into festive silicone molds, these protein-packed chocolates are perfect for snacking, gifting, or using as toppers for your holiday desserts, such as my Cheesecake Filled Chocoalte Easter Eggs. No baking required, just melt, mix, mold, and chill!
Ingredients
- 8 oz8 oz8 oz Sugar-Free Dark Chocolate Chips, (chocolate chips of choice)
- 2 Tbsp2 Tbsp2 Tbsp Collagen
- 2 tsp2 tsp2 tsp Coconut Oil
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Melt the Chocolate: In a microwave-safe bowl or using a double boiler, melt the chocolate chips with the coconut oil until smooth and glossy. Microwave in 30-second intervals, stirring in between, until fully melted.
- Stir in Collagen: Once melted, quickly whisk in the collagen powder until fully incorporated. The mixture should be smooth and slightly thickened.
- Fill the Molds: Carefully spoon or pour the chocolate mixture into your silicone Easter egg molds. Tap the mold gently on the counter to release any air bubbles and level the chocolate.
- Chill Until Set: Place the filled molds in the refrigerator or freezer until the chocolate is completely firm (about 20–30 minutes in the fridge or 10–15 in the freezer).
- Unmold and Enjoy: Gently pop the chocolates out of the molds. Store in an airtight container in a cool place or refrigerate until ready to use.
Notes
Note: This recipe can be made with white choocolate chips as well.
