Chocolate Date Caramels (3 Ingredients) (Edit recipe)

These caramels are made with just 3 ingredients: dates, tahini and dark chocolate.  They consist of a gooey caramel filling that's coated in dark chocolate.  These caramels make a great Valentine's treat or holiday gift.  This recipe is paleo, vegan and gluten free.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place the dates in a small bowl. Pour hot water over the dates so that they are fully submerged. Soak for 5 minutes, then drain the water.
  2. Place the dark chocolate in a small, microwaveable bowl. Melt in the microwave at 20-30 second intervals, stirring between.
  3. Pour about 1 teaspoon of the melted chocolate into 15 slots of a miniature silicone muffin pan* Use a mini spoon or spatula to push the chocolate up the edges of each slot.
  4. Place the chocolate cups in the freezer to set.
  5. To make the caramel, add the dates and tahini to a food processor. Blend until well combined, stopping to scrape the sides as needed.
  6. Retrieve the chocolate cups from the freezer and scoop 1 rounded teaspoon of the caramel into each slot. I find this easiest to do by dampening my hands with a little water, then rolling the caramel filling into balls and pressing them down in each slot. Getting your hands a little wet will keep the caramel from sticking to them.
  7. Pour the remaining melted chocolate over the caramel filling.
  8. Set the caramel cups in the fridge or freezer to firm.
  9. Store in an airtight container or baggie, in the fridge or freezer.

Notes

*If you don't have a silicone muffin pan, then feel free to line a mini metal muffin pan with paper liners.
