  3. Melt the Chocolate: Place chocolate chips in a heatproof bowl. Pour the hot cornmilk mixture over the chocolate. Let sit 2 minutes, then whisk until smooth.
  4. Finish the Base: Stir in the butter until fully melted and glossy.
  5. Flavor the Chocolate: Stir in tamari, vanilla, and half of the crushed freeze-dried grapefruit until fully incorporated.

  7. Shape: Scoop about 1 tablespoon per truffle and roll gently into balls.
  8. Coat: Roll truffles in the remaining crushed freeze-dried grapefruit, pressing lightly so it adheres. Optionally, roll in cocoa powder.
