Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. For the sauce,  mix the tamari , rice vinegar, tomato paste, garam masala, coriander powder and 'meat & potatoes' seasoning
  2. Add 1 Tbsp oil to a heated pan and sauté the chopped chicken breast till it turns white (about 5 mins) and put aside
  3. Heat a wok or pan and add chopped bacon pieces to it. Cook for a few minutes till bacon releases fat
  4. Add the grated garlic and julienned ginger and let these sizzle for 2 mins
  5. Add the onions, red bell pepper, green bell pepper and carrots and stir fry on high heat for 2 mins.
  6. Make a well in the center, add some oil and crack 2 eggs. Scramble quickly till they are cooked and then mix with the veggies
  7. Add the chicken pieces in
  8. Now add the  sauce and mix it all well
  9. Separate rice gently with your fingers and add to the pan , and give it all a good mix for about 3 minutes
  10. Garnish with chopped spring onions

Notes

You can add sriracha for an added kick. For a superbowl party, I like to serve in in small single serve bowls
