Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- For the sauce, mix the tamari , rice vinegar, tomato paste, garam masala, coriander powder and 'meat & potatoes' seasoning
- Add 1 Tbsp oil to a heated pan and sauté the chopped chicken breast till it turns white (about 5 mins) and put aside
- Heat a wok or pan and add chopped bacon pieces to it. Cook for a few minutes till bacon releases fat
- Add the grated garlic and julienned ginger and let these sizzle for 2 mins
- Add the onions, red bell pepper, green bell pepper and carrots and stir fry on high heat for 2 mins.
- Make a well in the center, add some oil and crack 2 eggs. Scramble quickly till they are cooked and then mix with the veggies
- Add the chicken pieces in
- Now add the sauce and mix it all well
- Separate rice gently with your fingers and add to the pan , and give it all a good mix for about 3 minutes
- Garnish with chopped spring onions
Notes
You can add sriracha for an added kick. For a superbowl party, I like to serve in in small single serve bowls
