mexican street corn protein dip
if you’re feeling authentic, you may call it esquites.
if you live in the midwest… you probably just call it mexican street corn dip 😂🌽
either way — it’s simply delicious! in my version, we are caramelizing corn, peppers, onions, & green chiles. then it gets folded into a creamy, protein-boosted base of cottage cheese + greek yogurt + cotija, with my favorite siete jalapeño botana sauce for even more punch. then i load it up with jalapeños, tomatoes, cilantro, bacon (if you really want to elevate the hell out of it), & more cotija cheese!
it’s creamy. smoky. tangy. a little spicy. & unlike the usual version, this one actually has some staying power thanks to the protein boost.
scoop it up with your favorite beef tallow corn tortilla chips & prepare for the bowl to disappear fast. 🌽🔥
Ingredients
base
- 2 lb2 lb2 lb Frozen Corn
- 1 lb1 lb1 lb Bell Pepper and Onion Blend, Frozen
- 5 oz5 oz5 oz Green Chiles, Fire Roasted

sauce
- 1/2 cup1/2 cup1/2 cup Cottage Cheese
- 1/2 cup1/2 cup1/2 cup Plain Greek Yogurt
- 1/2 cup1/2 cup1/2 cup Cotija Cheese, or queso fresco
- 1/4 cup1/4 cup1/4 cup Jalapeño Botana Sauce - Siete Foods

- 1/2 tsp1/2 tsp1/2 tsp Garlic Powder

- 1/2 tsp1/2 tsp1/2 tsp Onion Powder

- 1/2 tsp1/2 tsp1/2 tsp Smoked Paprika
- 1/2 tsp1/2 tsp1/2 tsp Salt and Pepper
for folding in
- Jalapeño Pepper, diced
- Tomato, Cherry, diced

- Cotija Cheese, or queso fresco
- oven-baked bacon (click for recipe), finely chopped, optional
for serving
- Traditional Tortilla Chips - Masa, or your favorite chip/veggie

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a large skillet, add corn, peppers, onions, & green chiles.
- turn heat as high as it can go, then leave the veggies ALONE (lol, but stay close by).
- once you start to notice veggies start to brown & moisture evaporate, turn heat down to medium.
- pour in a little water to pick up a little of the caramelization on the bottom & continue to cook until fully caramelized.
- transfer veggies to a bowl, then completely cool.
- add all ingredients for sauce to a food processor, then add to cooled veggies along with jalapenos, tomatoes, cilantro, bacon, & cotija cheese.
- serve with your favorite tortilla chips & veggies for dipping.
