Shrimp and Avocado Rounds
These shrimp and avocado rounds are fresh, vibrant, and perfect for sharing. Crisp slices of white baguette are topped with smashed chilli lime avocado and tender baby shrimp for a bright, zesty bite. They’re light yet satisfying — the kind of easy appetizer that looks impressive and disappears fast.
Ingredients
- 1 whole1 whole1 whole Baguette, cut into 1/2 inch round pieces
- 2 whole2 whole2 whole Avocado, ripe
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Lime Juice
- 1 tsp1 tsp1 tsp Chili Lime Seasoning
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
- 20 whole20 whole20 whole Shrimp, Cooked, peeled, deveined, and tail off
- 5 sprigs5 sprigs5 sprigs Cilantro, chopped, *optional
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl, mash the avocado until fairly smooth.
- Add in the lime juice, chili lime seasoning, and mix until combined. Season with salt and pepper to taste.
- Top each baguette round with a generous slather of avocado and shrimp.
- Sprinkle a bit of chopped cilantro on each avocado and shrimp round and top with an additional sprinkle of chili lime seasoning. Enjoy.
Notes
You can substitute cilantro with any type of microgreen if desired.
