- 0.25 tsp0.25 tsp0.25 tsp Sea Salt

- 1 tsp1 tsp1 tsp Cinnamon, Ground

- 1 tsp1 tsp1 tsp Vanilla Extract

- Preheat oven to 350°F. Line a small baking tray with parchment paper.
- Mix wet ingredients:
- In a bowl, stir together nut butter, maple syrup (or honey), and vanilla until smooth.
- Add dry ingredients:
- Mix in oats, TVP (or more oats), nuts/seeds, salt, and cinnamon until everything is well coated.
- Bake:
- Spread the mixture evenly on the prepared tray, pressing it down firmly with a spatula to help form clusters.
- Bake for 18–22 minutes, rotating the pan halfway through, until the edges are lightly golden.
- Cool completely:
- Let granola cool fully on the tray, for 30ish minutes — this is when it gets crunchy.
- Add chocolate (optional):
- Once completely cool, sprinkle in chocolate chips.
Notes
✨ Press granola down before baking for chunkier clusters
✨ Swap cinnamon for pumpkin spice or chai spice
✨ Store in an airtight jar for up to 1 week (or freeze for longer)
