High-Protein Peanut Butter & Chocolate Chip Muffins G/f
These use cottage cheese to boost the protein, and oat flour to keep them gluten-free. My kids devoured these!
Ingredients

- 2 whole2 whole2 whole Egg
- 0.75 cup0.75 cup0.75 cup Coconut Sugar

- 1 cup1 cup1 cup Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Cashew Milk, Cows milk will work too
- 0.5 cup0.5 cup0.5 cup Creamy Peanut Butter

- 1 Tbsp1 Tbsp1 Tbsp Vanilla Extract

- 2 cups2 cups2 cups Oat Flour

- 2 tsp2 tsp2 tsp Baking Powder

- 1 cup1 cup1 cup Chocolate Chips - Enjoy Life

- Preheat oven to 375°
- Mix all ingredients except flour, baking powder, and chocolate chips
- Add in oat flour and baking powder and mix
- Stir in chocolate chips
- Fill silicone muffin trays up to 3/4 of the way
- Bake at 375° for 20 mins
