Crunchy Cabbage Salad with Crispy Ramen Topping
This Crunchy Cabbage Salad with Crispy Ramen Topping was inspired by the retro salad we grew up with, but we’ve made some upgrades. It’s full of with fresh vegetables, edamame, a fast dressing that you can shake up in a jar, and the greatest dry ramen noodle crunchy topping you’ll ever have. We like to serve this as a main dish or with our Cacio e Pepe Tofu Bites or Sweet and Smoky Salmon.
Ingredients
Soy Sauce Vinaigrette
- .5 cup.5 cup.5 cup Vegetable Oil, or other neutral oil
- .25 cup.25 cup.25 cup Rice Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Soy Sauce, Low Sodium, or Tamari

- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Granulated White Sugar

- 1 pinch1 pinch1 pinch Sea Salt, plus more to taste

- 1 pinch1 pinch1 pinch Black Peppercorns, Ground Fresh, (a couple turns)

Crispy Ramen Topping
- 3 oz3 oz3 oz Instant Ramen Noodles (like Maruchan), 1 package (noodles only)
- .5 cup.5 cup.5 cup Almonds, Sliced, unsalted
- 2 Tbsp2 Tbsp2 Tbsp Sesame Seeds
- 3 Tbsp3 Tbsp3 Tbsp Butter, Unsalted, use vegan butter to keep this plant-based

- .5 tsp.5 tsp.5 tsp Poultry Seasoning - Primal Palate

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- .5 tsp.5 tsp.5 tsp White Pepper, ground

- .25 tsp.25 tsp.25 tsp Sea Salt

- .25 tsp.25 tsp.25 tsp Red Pepper Flakes

- .5 head.5 head.5 head Green Cabbage, shredded
- .25 head.25 head.25 head Purple Cabbage, shredded
- 1 cup1 cup1 cup Carrots, shredded
- 1 cup1 cup1 cup Edamame (Soybeans), shelled (beans only)
- 8 whole8 whole8 whole Green Onion (Scallion)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Soy Sauce Vinaigrette
- Combine all of the dressing ingredients in a jar and shake vigorously. Set it aside for later.
- Crispy Ramen Topping
- Melt the butter in a pan over medium heat.
- Add the almonds, sesame seeds, instant ramen noodles, and all the seasonings and cook for 3 to 5 few minutes until the nuts, seeds, and noodles are lightly toasted. Set them aside to cool. They’ll get more crispy as they rest.
- Crunchy Cabbage Salad
- Add all of the cabbage, carrots, edamame, and green onions to a large salad bowl.
- Toss the salad with the prepared dressing and top with the cooled crispy ramen topping.
Notes
- Use a mandolin, if you have one. This will speed up the prep and help slice up the cabbage into thin, even strips.
- Dress the salad right before serving to preserve the full crunchy cabbage potential.
- If making the crunchy ramen topping ahead of time, keep it in a dry, air tight container to keep out any moisture that may soften the dry ramen noodles.
- Top each individual serving with the ramen topping. Otherwise, it can get soggy.
