Colcannon
I’m always looking for ways to increase vegetables into our meals. I love this simple recipe that blends a traditional comfort food, mashed potatoes, with sautéed cabbage for a perfect side dish. This is an Irish dish, and today is St. Patricks’ Day but this yummy dish can be eaten year round. Perfect with corned beef, roast chicken or BBQ steak, enjoy.
Ingredients
- 3 lb3 lb3 lb Potatoes, Russet, peeled and cubed about 1.5”
- 4 pieces4 pieces4 pieces Bacon, diced

- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil

- .5.5.5 Green Cabbage, small head, think sliced
- .5.5.5 Onion, I prefer sweet onion, but any works
- .5 cup.5 cup.5 cup Half and Half, or whole milk
- 2 Tbsp2 Tbsp2 Tbsp Yogurt, Plain, or sour cream
- .25 cup.25 cup.25 cup Butter, Salted

- .5 cup.5 cup.5 cup Aged Cheddar Cheese, grated

- 111 Green Onion (Scallion), sliced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large pot add water about half way, bring to boil.
- Add potatoes and cook until tender, about 15 minutes.
- While the potatoes cook prepare the rest.
- In a skillet on medium heat, add the olive oil and cook the bacon until crispy, remove onto plate.
- Add the onion and cabbage and cook in bacon fat/oil on medium until soft, about 10 minutes.
- When the potatoes are done, drain and mash.
- Add butter, milk, yogurt, salt, and pepper to taste.
- Add the cabbage and onion mixture and stir to combine.
- Spoon into serving dish and top with cheese, scallion, and bacon.
