Mediterranean Tofu Scramble
This Mediterranean tofu scramble is a quick, high-protein, plant-based breakfast packed with fiber, antioxidants, and heart-healthy fats from spinach, cherry tomatoes, and kalamata olives. And if you're not an olive lover leave those out and add what every veggies you love most 🙂
Ingredients

- 4 cups4 cups4 cups Baby Spinach
- 1 cup1 cup1 cup Freeze-Dried Cherry Tomatoes - CITREVE

- 0.25 cup0.25 cup0.25 cup Red Onion
- 2 cloves2 cloves2 cloves Garlic, minced

- 1 tsp1 tsp1 tsp Oregano, Dried

- 1 tsp1 tsp1 tsp Parsley, Dried

- 1 whole1 whole1 whole Lemon, juiced

- 1 pinch1 pinch1 pinch Salt and Pepper

- Heat olive oil in a pan over medium heat
- Sauté red onion + garlic for 2–3 minutes
- Add crumbled tofu + seasonings, cook 5–7 minutes
- Stir in hydrated cherry tomatoes + olives, cook another 2–3 minutes
- Add spinach last and cook until just wilted
- Finish with a squeeze of lemon
