“2 Ingredient” Bagel (GF)
I know you've seen the viral 2 ingredient or high protein bagels going around. Who doesn't love a good bagel? I've made this bagel now 3 times and each it gets better and better.
My favorites were the cinnamon sugar and ebtb with jalapeño seasoning.
Now gluten free friends don't expect these to taste like a glutinous bagel. It was moreso a soft on the inside, firm on the outside bread ;).

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl add gluten free flour, baking powder and salt
- Next add in the Greek yogurt
- Use a spatula to fold the dry mixture into the yogurt (the mixture will be very sticky)
- Add a Sprinkle of flour on top and use your hands to form a ball
- Flour a baking mat or a clean counter and take your ball of dough
- Cut the dough evenly into two portions
- Take each portion and roll into a circle to form an "O" shape
- You can use your hands to poke a hole in the middle or in my case I found a random kitchen tool to push through the middle
- Place on a baking sheet and put into the freezer for 6 minutes
- *Now here's where you choose your own adventure. I've tried boiling the bagels and also not boiling. The texture to me was the same with either technique
- If you choose to boil only boil in hot water on the stove for 1 minute
- In a small bowl mix one egg and 1 tsp of water
- Use a fork to thoroughly mix it together
- Take a brush and brush the top of each bagel
- *Add your topping of choosing thoroughly over the top
- (Cinnamon sugar topping: Add Cinnamon, Sugar & Nutmeg to a bowl and mix together. I drizzled honey on top for fun)
- Set your airfryer to 375 degrees Fahrenheit and place a sheet of parchment paper and then your bagels inside
- Airfry for 26 minutes or until done
- *Tip: I turned my bagels over at 20 minutes and this revealed they weren't cooked. So I air fried for an additional 6 minutes
- Place in an airtight container if you aren't consuming right away
Notes
I've only tried this with Bob Red Mills 1:1 GF flour. I'd recommend eating these as soon as possible. Day 3 they were still edible but the taste wasn't at its peak. I like to toast mine to give a crunchy layer.
