Thumbprint cookies filled with Blood Orange Habanero filling (gf)
A crispy, shortbread cookie infused with orange zest and filled with blood orange habanero filling.
Ingredients
- 1.125 cup1.125 cup1.125 cup Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
- 1 tsp1 tsp1 tsp Vanilla Extract
- 2 Tbsp2 Tbsp2 Tbsp Orange Zest
- 0.25 cup0.25 cup0.25 cup Powdered Sugar
- 0.5 cup0.5 cup0.5 cup Granulated White Sugar
- 0.5 cup0.5 cup0.5 cup Butter, Salted, Room temp
- 111 Blood Orange Habanero Jam - Profanity Jam
- 111 Egg Yolk, Room temperature
- 0.250.250.25 Granulated White Sugar

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees Fahrenheit
- In a large bowl combine butter, sugars and orange zest
- Once light and fluffy add in egg yolk and vanilla extract
- Sift flour into the bowl and mix with a baking spoon
- Use your hands to push dough together (you may need to add a Sprinkle of flour to help with the stickiness)
- In a small bowl add 1/4c granulated sugar
- Separate dough into small balls and roll into the sugar
- Place on a cookie sheet and chill for 10 minutes
- Bake for 12 minutes**
- Halfway through baking (6 minutes) use a tsp to make an indent in the middle of the cookie and fill with blood orange habanero filling
- Bake an additional 6 minutes and enjoy
- You can Sprinkle powdered sugar on top for additional sweetness and beauty
Notes
You can take your butter out the night before to ensure ultimate fluffiness when mixing the butter, granulated sugar and powdered sugar. Alternatively you can use 1c of granulated white sugar vs powdered sugar and granulated sugar.
