Confession….ive never actually had a Girl Scout Samoa cookie. But, I’ve been really into shredded coconut lately and have been seeing this recipe and knew I wanted to try! Trust me, you are going to love this recipe!! It is super quick and simple to make, and is just so tasty

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Soak the dates for 10 minutes in boiling water, then drain
  2. Add the dates and coconut to a processor and blend
  3. Shape into rounds and place on a prepared baking sheet, you can shape a circle in the middle if you’d like the classic look
  4. Place in the freezer for 5 minutes to firm
  5. Melt chocolate and coconut oil if using
  6. Take out of the freezer and dip each cookie bottom in chocolate. Drizzle remaining on top
  7. Freeze until chocolate sets and it’s read
