Samoa Latte
This iced coffee is flavor packed & delicious, without any refined sugars or questionable ingredient coffee syrups! Made with a homemade caramel sauce, homemade 4 ingredient no bake Samoas, and a protein rich whipped topping! There is SO much to love!

- 2 Tbsp2 Tbsp2 Tbsp Caramel Sauce
- 0.333 cup0.333 cup0.333 cup Creamy Peanut Butter, Or cashew butter
- 3 Tbsp3 Tbsp3 Tbsp Pure Maple Syrup, Room temp
- 2 Tbsp2 Tbsp2 Tbsp Coconut Oil, Melted
- 2 Tbsp2 Tbsp2 Tbsp Collagen
- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract
- 0.75 cup0.75 cup0.75 cup Heavy Whipping Cream
- .25 cup.25 cup.25 cup Vanilla Protein Powder
- .25 cup.25 cup.25 cup Powdered Monkfruit Sweetener - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Tapioca Starch, Or arrowroot
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Please note you'll have extra whipped cream & caramel to use for following days or recipes. Makes 6 Samoa cookies (and that the nutritional facts will be inaccurate because of this)
- Make whipped cream- chill a mixing bowl, then add all ingredients l, and whip using a stand or electric hand mixer, until fluffy, about 5-7 minutes. Keep cold
- Make Samoas- process soft dates, coconut & pecans together
- Form the dough into about 6 patties and Cut a middle hole out of each so it resembles a donut
- Top each with the remaining toasted coconut nut. Place in freezer to set while you melt chocolate.
- Dip the bottom of each cookie in the dark chocolate
- Then drizzle dark chocolate on the top of each cookie. Place in freezer to set for about 10 min until chocolate is firm
- Make caramel by whisking all ingredients together
- Froth caramel and milk together, add ice and add cold brew coffee
- Pipe homemade whipped cream on top and drizzle with more caramel, optional melted chocolate, toasted coconut, and/or a homemade Samoa!

Notes
You can also up the protein here by using a protein coffee. The first time I made this I use Javvy Caramel Protein Coffee mixed with Fairlife milk and it was 20g protein!
