Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 325°F (160°C) and line a baking tray with parchment paper.
  2. In a large mixing bowl, combine tiger nuts, shredded coconut, pumpkin seeds, sunflower seeds, cinnamon, ginger, and sea salt.
  3. Pour melted coconut oil and optional maple/date syrup and vanilla over the dry ingredients. Mix until everything is evenly coated.
  4. Spread the mixture in an even layer on the prepared baking tray.
  5. Bake for 15–20 minutes, stirring halfway through to prevent burning. Watch carefully: granola should be golden and fragrant, not too dark.
  6. Remove from oven and allow to cool completely. Granola will crisp up as it cools.
  7. Serve in a bowl with coconut yogurt or AIP milk and top with fresh fruits of your choice.

Notes

  • Store cooled granola in an airtight container for up to 2 weeks.

  • You can swap seeds according to preference, keeping them AIP-compliant.

  • For extra crunch, lightly toast the tiger nuts before chopping.

  • Avoid sweeteners if strictly AIP; the natural flavor of tiger nuts is slightly sweet on its own.
