Air Fryer Salmon Bites, Sauteed Broccoli & Coconut Rice
This weekly dinner staple is a must. I make it every week and it's so easy. The salmon is all hands-off cooking, the rice is super simple, and the sauteed broccoli is just as easy. It may seem like a lot of steps but it's all very easy and comes together quickly. I have shared a few notes below the recipe on some of my favorite products to use, but you can modify with whats available to you. We hope you enjoy this recipe as much as we do!
Ingredients
- 2 whole2 whole2 whole Wild Caught Salmon Filet, I use BBQ cut from TJs
- 0.333 cup0.333 cup0.333 cup Teriyaki Sauce, I use Soyaki from TJs
- 1 cup1 cup1 cup Jasmine Rice
- 13 oz13 oz13 oz Coconut Milk, I use TJs full fat coconut milk
- 1 bunch1 bunch1 bunch Broccoli
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Onion Powder
- 1 pinch1 pinch1 pinch Sea Salt
- 1 pinch1 pinch1 pinch Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Remove skin from salmon and cut into 1in cubes. Place in a bowl and toss with teriyaki/soyaki sauce. Let sit aside, or in fridge if marinating longer than an hour.
- In a small pot, combine 1c jasmine rice with 1 can full fat coconut milk. Turn on high heat and bring to a boil, stirring frequently. Once boiling, lower heat and let sit with lid on. Once all liquid is absorbed, turn off heat and remove pot from heat.
- Spray bottom of the air fryer basked with olive oil or avocado oil and add salmon in one layer. Air fry on high heat for 10 minutes.
- Wash and trim broccoli. Toss with 2tbsp olive oil, salt, pepper and minced garlic. Add a little olive oil to a pan and heat on medium heat. Once olive oil is hot, add broccoli and cook until slightly softened but with a little char. It's best with a little crunch!
Notes
- I always marinate my salmon for a couple hours to let the soyaki/teriyaki absorb into the salmon filets. You can marinate it in the fridge for up to 8 hours, or as little as 30 minutes.
- I always use the bbq cut salmon filets from Trader Joes. I find they have the best flavor and texture for air frying.
- TJs soyaki sauce is our favorite. If you don't have a TJs near you, any type of teriyaki or asian-inspired sauce works!
- You can make as many salmon filets as you want! The broccoli and rice make more than 2 servings, but the salmon makes 2. We normally each have a salmon filet. Just a tip for leftovers!
