Almond Maize Horchata (Edit recipe)

A spin on the traditional, sweet, milky drink popular in Spain and Latin America and one of my absolute favs!. I’m using Maizly corn milk in the secondary step, as well as Lark Ellen Farms sprouted almonds – both lend added creaminess and fiber. Since this recipe can be made in advance, it’s perfect for any game day or brunch gathering. Stir well and serve well chilled with plenty of ice!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add rice and one cinnamon stick to the base of a high powered blender. Pulverize until ground up well, then pour into a glass container.
  2. Add almonds and the two remaining cinnamon sticks to the ground up rice. Pour in hot water, not boiling, stir well and cover. Let mixture sit overnight on the counter top.
  3. Next day, pour this entire mixture into the base of a high powered blender and add the corn milk. Blend until very smooth, the amount of time will vary depending on the blender you are using.
  4. Strain through a nutbag, cheesecloth lined mesh strainer or your preferred method for best results. You may need to strain it a few times for desired texture.
  5. Once strained, pour into a serving container and sweeten. Start by adding ½ cup maple syrup, stir well and taste. If it’s not sweet enough for you add a little bit more as well as the vanilla, salt and ground cinnamon, if using. Chill for best enjoyment and serve over ice with a dash of ground cinnamon!

Notes

If the beverage is too “thick” for your tastes, add a bit more Maizly (or water) as needed to achieve desired consistency.
