Lime Green Chili Chicken (Edit recipe)

This baked chicken is our go chicken for our SPICY AVOCADO CHICKEN SOUP! It is tasty as a stand alone for any meal or to use in chicken salad. You can serve it with a green salad to add some protein as well and pair with our CREAMY TOMATILLO "CAFE RIO" DRESSING! It bakes up quickly and the layers of flavor are simply remarkable! Lime and green chilies pair so well together and since you baste this chicken during it's baking process, the flavors literally caramelize on top...yum! It's naturally PALEO, WHOLE30, KETO & just plain DELICIOUS!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 415° F.
  2. In a small bowl, whisk together broth, lime juice, green chilies, garlic powder, salt, chipotle powder, pepper & zest, set aside.
  3. Melt ghee in a large cast iron pan. Sprinkle a bit of salt on both sides of the chicken then add to the pan & cook until browned on each side. Remove to a parchment lined ¼ sized baking sheet. Deglaze pan with approx. 2 tblsp sauce, then pour over chicken.
  4. Pour remaining sauce over chicken, lay lime slices down & sprinkle half of the cilantro on top. Bake for 15-20 minutes, basting every 5 minutes with the sauce (optional, but please just do it) until chicken is cooked through.
  5. Remove from the oven & sprinkle with remaining chopped cilantro. Slice or shred then enjoy in our soup or any dish you want a little bit of heavenly tasting chicken for.

Notes

*remove chicken from the fridge and allow to set at room temperature for about 15 minutes before beginning to prep - this allows for an even bake and less curling of the chicken as it bakes.
