Andalusian Turkey-Pear Alfredo
I tried reconstructing this recipe from a picture of a dish I made several months ago, and it turned out excellent. It's really a standard broccoli alfredo, but with a twist on the spices and the addition of just-right sweet pears. AI and I did dispute on the pears part, but it was quite necessary for the dish.
Ingredients
- 1 whole1 whole1 whole Cacio E Pepe Pasta Sauce - Trader Joe's, I used TJs Cacio E Pepe Sauce, but any alfredo sauce should do. My bottle had about 16 ounces of sauce in it.
- 1 lb1 lb1 lb Ground Turkey

- 1 whole1 whole1 whole Pear, Bosc, Though any firm pear will do. Dice to grape size pieces.
- 1 cup1 cup1 cup Peas, Frozen
- 2 cup2 cup2 cup Broccoli, 1 floret was enough for me; Cut to big bite size pieces
- 1 tsp1 tsp1 tsp Granulated Onion, Minced Dried Onion, If you can't find this in your pantry, you can skip it.

- 1 tsp1 tsp1 tsp Smoked Paprika
- 1 tsp1 tsp1 tsp Thyme, Dried

- 0.5 tsp0.5 tsp0.5 tsp Cumin Seed, Whole
- 2 whole2 whole2 whole Cloves, Whole, To be fished out.

- 0.25 tsp0.25 tsp0.25 tsp White Peppercorns, Whole, Pounded.
- 0.5 tsp0.5 tsp0.5 tsp Lemon Juice
- 6 bunch6 bunch6 bunch Fusilli Pasta, 5-7 handfuls. Or any other pasta of your choice.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Boil the pasta for 10 minutes (1-2 mins under the box time). Drain, saving 1/4 cup pasta water.
- Separately, heat (olive) oil, dried onion, cumin seeds, and cloves in a wide skillet over High Heat. Add turkey after it starts to fizzle.
- Sear undisturbed (Open Pan; NO LID) until the liquid evaporates and you hear a sharp sizzle. Break into "pebbles" until 90% browned.
- Remove the turkey to a bowl. Dispose of the cloves. Leave the flavored oil in the pan.
- Re-add oil to the pan, and add broccoli florets. Add ~2 tbsp water to create a flash-steam (Open Pan; NO LID). Saute for 3–4 minutes until bright green and slightly charred
- Add the Frozen Peas, Smoked Paprika, Thyme, and Pounded White Peppercorns. Stir for 60 seconds.
- Add the Grape-sized Pears chunks and splash Lemon Juice. Mix a few times over 2 minutes.
- Add the Turkey back into the pan. Toss for 1-2 minutes to meld.
- Turn heat to LOW. Stir in the Cacio e Pepe Sauce and the hot pasta. Stir vigorously for ~1 minute until a smoky-orange sheen forms.
