- Prep the oven and pan: Heat oven to 400 °F (200 °C) and line a baking sheet with parchment.
- Prep Apples: Sauté apples in a bit of butter until soft. Set aside to cool.
- Mix dry ingredients: In a large bowl, whisk together flour, baking powder, salt, and black pepper.
- Cut in the butter: Add cold butter and cut it in until the mixture resembles coarse crumbs.
- Fold in mix-ins: Stir in cheddar, cooled sautéed apples, and toasted walnuts.
- Prepare the liquid: In a small bowl, whisk together sourdough discard, milk, and Jozo Tamari.
- Combine wet and dry: Gently fold the liquid into the dry ingredients until a shaggy dough forms.
- Laminate the dough: Tip the dough onto a lightly floured surface and press it into a 7×10-inch (17×25 cm) rectangle. Lift the bottom third of the dough and fold it into the middle, then fold the top third down over it (like a pamphlet). Turn the dough 90° so it is lengthwise in front of you, gently press or roll it back into a 7×10-inch rectangle, and repeat the fold once more.
- Shape and cut: After laminating, gently press the dough into a final 7Ă—10-inch rectangle. Cut into 12 scones.
- Rest: Place cut scones in the refrigerator, cover, and chill 1 hour (up to 24 hours).
- Bake: Place scones on the prepared baking sheet, brush tops lightly with cream or milk, (you can also add a few sprinkles of cheddar cheese to the tops) and bake 12-15 minutes until golden brown and set.
- Optional finishing touch: Brush warm scones with melted butter and a few drops of Jozo Tamari
