Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Prep the oven and pan: Heat oven to 400 °F (200 °C) and line a baking sheet with parchment.
  2. Prep Apples: Sauté apples in a bit of butter until soft. Set aside to cool.
  3. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, salt, and black pepper.
  4. Cut in the butter: Add cold butter and cut it in until the mixture resembles coarse crumbs.
  5. Fold in mix-ins: Stir in cheddar, cooled sautéed apples, and toasted walnuts.
  6. Prepare the liquid: In a small bowl, whisk together sourdough discard, milk, and Jozo Tamari.
  7. Combine wet and dry: Gently fold the liquid into the dry ingredients until a shaggy dough forms.
  8. Laminate the dough: Tip the dough onto a lightly floured surface and press it into a 7×10-inch (17×25 cm) rectangle. Lift the bottom third of the dough and fold it into the middle, then fold the top third down over it (like a pamphlet). Turn the dough 90° so it is lengthwise in front of you, gently press or roll it back into a 7×10-inch rectangle, and repeat the fold once more.
  9. Shape and cut: After laminating, gently press the dough into a final 7Ă—10-inch rectangle. Cut into 12 scones.
  10. Rest: Place cut scones in the refrigerator, cover, and chill 1 hour (up to 24 hours).
  11. Bake: Place scones on the prepared baking sheet, brush tops lightly with cream or milk, (you can also add a few sprinkles of cheddar cheese to the tops) and bake 12-15 minutes until golden brown and set.
  12. Optional finishing touch: Brush warm scones with melted butter and a few drops of Jozo Tamari
