Apple Streusel Pancakes
Gluten free Apple Streusel Pancakes are a delightful cinnamon spiced pancake dotted with bits of fresh apple, a crunchy layer of streusel and drizzle of icing.
Ingredients
For the Pancakes:
- 1.5 cups1.5 cups1.5 cups Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
- 2 Tbsp2 Tbsp2 Tbsp Sugar, Raw
- 2 tsp2 tsp2 tsp Baking Powder
- 1 tsp1 tsp1 tsp Baking Soda
- .5 tsp.5 tsp.5 tsp Sea Salt, fine
- .5 tsp.5 tsp.5 tsp Cinnamon, Ground
- 1.5 cups1.5 cups1.5 cups Buttermilk, full-fat or low-fat
- 222 Eggs, large
- 6 Tbsp6 Tbsp6 Tbsp Butter, Unsalted, melted
- .5-.75 cup.5-.75 cup.5-.75 cup Apple, Granny Smith, diced to 1/4"
For the Streusel:
- .75 cup.75 cup.75 cup Quick Cooking Oats, gluten-free
- 3 Tbsp3 Tbsp3 Tbsp Light Brown Sugar
- .5 tsp.5 tsp.5 tsp Cinnamon, Ground
- 2 Tbsp2 Tbsp2 Tbsp Butter, Unsalted, melted
Toppings:
- 111 Apple, Granny Smith, cored & diced to ¼"
- .5 cup.5 cup.5 cup Powdered Sugar
- 2 tsp2 tsp2 tsp Water, milk or apple juice (*just enough to dissolve the sugar)

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a small bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon with a fork until uniform in color.
- In a medium mixing bowl, beat the buttermilk and egg together until uniform in color.
- Whisk the flour mixture into the buttermilk mixture until no lumps remain.
- Incorporate the melted butter making sure that there are no more streaks of oil, then add in the diced apple. Set aside while you make the Streusel & Icing.
- In a small bowl, combine the oats, sugar and cinnamon. Drizzle in the melted butter and stir to combine well. Set aside.
- In a small bowl combine just enough apple juice, milk or water with the powdered sugar to create a thick glaze. Stir to remove the lumps. If it is too thin, add more sugar until you get the right consistency. Set aside.
- Heat a large griddle or frying pan to medium heat.
- Ladle the pancake batter onto the griddle as usual making pancakes approximately 4-5 inches in diameter.
- Sprinkle 1 tablespoon of the Streusel on top of the wet batter while one side browns.
- Flip the pancakes and allow the other sides to brown. Work in batches until all of the batter is used.
- You can keep pancakes warm in a 200 degree oven on a baking sheet. Serve with diced apple and a generous drizzle of icing.
