- 0.5 cup0.5 cup0.5 cup Parmesan Cheese
- 1 cup1 cup1 cup Gruyere Cheese, shredded
- 0.25 cup0.25 cup0.25 cup Parmesan Cheese
- 1 tsp1 tsp1 tsp Paprika

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 375°F (190°C).
- Blanch the asparagus: Bring a large pot of water to a boil. Add asparagus and cook for 3 minutes, until bright green and crisp-tender. Transfer to an ice water bath to stop cooking, then drain on paper towels.
- Arrange asparagus in a buttered 13x9-inch baking dish.
- Make the sauce: In a saucepan, melt butter over medium heat. Add minced shallots and cook until softened, about 3 minutes.
- Slowly pour in the heavy cream and simmer lightly. Stir in the Parmesan and Fontina (or Gruyère) cheeses and heat until melted and smooth.
- Pour the cheesy sauce over the asparagus and sprinkle with Parmesan and paprika.
- Bake for 30 minutes, until bubbly and golden.
Notes
Fontina cheese works well too in this recipe.
